Nut Butter Balls

I love having a quick-go to snack around the house...but I don't love eating unnecessary or empty carbohydrates. Don't worry...I'm not going to go all Atkins on you. Carbs are great and integral in any balanced diet, but we North Americans seem to be overdoing a bit.  So that's why I get excited when I find a snack that has a pretty balanced carb to protein to fat ratio...like these yummy nut butter balls.

Top Three Reasons you have to try these:
1) They're super healthy (full of good fats!) and kid friendly
2) You'll still get that satisfied "treat" feeling whenever you eat one (must be the cocoa...)
3) It doesn't require any baking...meaning it's a nice speedy snack to make

INGREDIENTS:
  • 3/4 cup of nut butter (whatever you like...almond, peanut butter, cashew etc)
  • 1/2 cup honey
  • 2 Tbsp cocoa powder
  • 1 tsp vanilla
  • 1 cup coconut
  • 1/8 cup cacao nibs
  • 1/4 hemp hearts                   
  • 1/4 cup ground flax seed powder               
  • 1/4 cup sesame seed
  • Extra coconut or sesame seeds to for coating   
DIRECTIONS
  • Mix nut butter, honey, cocoa, and vanilla together in a medium bowl.
  • Add dry ingredients and mix well
  • Roll mixture into 1 inch balls and coat with topping of your choice (coconut, sesame seeds etc).
  • Store in the fridge for best texture and taste
